I went out to breakfast this morning at Anna's House restaurant at Newburgh and Warren.    California omelet (cream cheese, bacon, avocado, and tomato) with a toasted English muffin and a side order of their in-house-made sausage patties.  VERY expensive, but definitely tasty.

 

Tonight will be a house favorite - chicken pillows!

OK...I had to look up Chicken Pillows because I have never heard of them before.  Now it's making want some Curry Puffs from Sala Thai in Eastern Market.  :drool

The ones I make are from crescent roll dough, filled with cream cheese, chicken, onion, and mushrooms., rolled up, dipped in egg wash and cracker crumbs and baked.... then topped with a sauce made from cream of chicken soup, milk, and mozzarella cheese.

preheat oven to 400

 

Ingredients:

3 cans of crescent roll dough, 8 count each

1 brick of cream cheese, softened

1 stick of butter, softened

about 1/2 to 3/4 cup of cooked chicken (chunks or shredded) OR 1 can of shredded chicken, drained

1 small can of mushrooms, drained OR 1/4 cup of fresh mushrooms, sliced

2 tablespoons (approximately) diced onions

3 eggs, beaten with an additional 2 tablespoons of water

2 sleeves of saltine crackers, crushed

 

Topping:

1 large can of condensed cream of chicken soup

1/3 cup milk

2-3 tablespoons of sour cream

3/4 cup shredded mozzarella

 

Mix cream cheese and butter until well blended.  Add mushrooms, chicken, and onion, mix well.   Remove dough from can and unroll.  Separate so that instead of 8 crescents, it is 4 rectangles.  In the center of each rectangle, place a good-sized spoonful of the cream cheese mixture.  Fold up the dough and seal up any cracks/holes.  Dip in egg wash, roll in cracker crumbs, and place on non-stick cookie sheet.  Repeat for each can of crescent roll dough.  NOTE:  Keep each can in the fridge until you need it - if the dough gets warm, it's harder to work with.

 

Once all pillows are made and on two cookie sheets (6 on each, they need room to bake), place in pre-heated oven for 20 minutes.

 

About five minutes before pillows are done baking, heat the soup in a large sauce pan with the milk, stirring constantly until smooth.  Add sour cream, and stir smooth.  Finally, add the cheese and stir until it melts.  Spoon over top of the pillows.
