Red meat may be getting some artificial help

Shoppers who think a pink cut of beef is a fresh one could be getting fooled by an industry practice that's relatively new.

Meat producers are using carbon monoxide to help the meat keep its pink hue. The companies say a lot of money is wasted when sellers toss out meat that is still safe to eat, but isn't as attractive because it's slightly brown.

A company that makes natural food extracts is trying to stop the meat companies from doing that. Kalsec Incorporated says meat treated with carbon monoxide could be left on a kitchen counter for five days, and would still look bright red and fresh. The company also says the carbon monoxide can hide other signs that the meat is spoiled -- like bad odors and the presence of slime.

I eat red meat occasionally.

I'd prefer it fresh though!

I hope they stop this new process of carbon monoxide treatment - otherwise if it can sit on a counter for 5 days and still be red, *and* if it stops it from having an odor or slime or showing signs of spoilage there are going to be a lot of sick people -- I can imagine a greedy market owner putting new dates on packaging.

I remember when Food Lion supermarkets n Tennessee got fined for washing chickens past their dates in bleach, rinsing them and repackaging them.

stuff like this makes me happy i don't eat just anything anymore!

i eat organic (though it is freakin expensive sometimes and i can't always buy it/buy everything i want or need) and primarily do NOT eat meat/poultry/fish anyways except for a few times a year. (well red meat that is, never eat poultry or fish. no hamburgers or hotdogs ever. i'd like to say i am vegetarian but that would be a lie. i do eat meat sometimes. i eat one steak a year, ribs once a year and corned beef sandwiches when i get the urge.)

I think I'm going to start raising my own cows and gettin my own meat.

My dad raises three of his own cows every year and slaughters them at the end. He also raises his own feed for them, however he says that the cost of raising them is about equal to buying an entire cow that is packaged and ready to eat. Small time farmers just cannot keep up with mass produced corporate farming. However the plus side is raising your own cows means you know exactly what has gone in to them.

you know what? fuck it. I only make x amount of money a year. I cant buy organic. I cant stress out about what my system can or cannot handle. I dont have time for all that worrying shit. Give me a steak, dont overcook it. I dont care what you read online, pass the A1 sauce. I dont care that McDOnalds or whoever used low grade meat, it didint give me a low grade fever so gimmee. I am a mexican man. I have eaten teh un-idntifyable meat at the roadside taco stand in Mexico many times. Yumme yummee yum. If the fire dont kill it, the chili will.

While I'm slightly aghast that carbon monoxide is being used on the meat, it doesn't entirely suprise me.

However, and no offense to Onyx for posting this information for us, I'm rather in Steven's camp. If I were to worry about every little thing that I hear about food, I'd be a non-eating person. I mean, think about it. Eggs were bad then they weren't. Too much meat was bad then it wasn't. Now it might be again. Certain fruits were suspect because of the pesticides used. Too much of this or too little of that. As long as I'm not an obese person and I try to eat fairly healthy (IE limited on fried/fatty foods, etc), I try not to have issues with my food. It's there for my sustenance.

Except for veal. Veal I won't eat.

I don't really eat it that often but when I do I want it fresh.

If people like it aged, fine. I don't want it to look fresh and not really be fresh. If I wanted it aged I should be able to tell it's aged. The part that raelly grossed me out is that they said it prevents slime from forming. Would you really eat it if there was slime on it? Ugh.

I don't do organic everything, but I do like to know what I'm buying. I just really hate these greedy bastards messing with food and I think the more it's publicized and the more people object the less they will be able to do to it.

I'm also probably a little more sensitive to this because my kid is severely allergic to several things and I have to be really aware of the ingredients every single thing I buy.
